The Porchetta is a favourite and delicious Italian adoption of a suckling pig
and is specially prepared for us by our Italian Chef. We offer here Porchetta
Medallions as shown in the photograph. They come in 1.8kg Rolled Medallions and
are seasoned with a mixture of bay leaves, garlic, fresh rosemary and seasonings.
They are ideal for a dinner party and can be traditionally roasted, having rubbed
the skin with olive oil and salt, with the emphasis being to ensure the crackling
is even all the way round. The aromatic and juicy flavour will make you want
to always eat pork this way.
