Holme Farmed Venison has been able to call on the supply of two leading Northern Smokehouses to be able to offer the very best smoked products. The salmon are sourced direct from the Shetland Isles, where the stronger currents produce healthier and well muscled fish, direct to the smokehouses for freshness. After being filleted and trimmed, they are washed and placed in dry salt to cure them. Once cured the fillets are washed again and laid on racks for drying and smoking over Pure Oak in a cool kiln. This is very important to maintain the oily texture and aromatic flavour.
